Tamal de Cazuela

Ingredients - Serves 8
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Green chilies - 2, chopped
- Tomatoes - 4, chopped
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Pork shoulder - 2 pounds, cut into chunks
- Salt - 1 teaspoon
- Lard - 1 cup
- Chicken broth - 4 cups
- Masa harina - 4 cups
Let's Get Started
- In a large bowl, mix the masa harina with the chicken broth until a dough forms.
- In a large pot, melt the lard over medium heat. Add the masa dough and salt, and cook, stirring constantly, until the dough is thick and smooth.
- Spread half of the masa dough in the bottom of a large, greased baking dish.
- In the same pot, cook the pork shoulder until browned on all sides. Remove the pork and set aside.
- In the same pot, cook the onion, garlic, tomatoes, chilies, cumin, and oregano until the vegetables are soft and the spices are fragrant.
- Return the pork to the pot and stir to combine with the vegetables and spices.
- Spread the pork mixture over the masa dough in the baking dish, then top with the remaining masa dough.
- Cover the dish with foil and bake at 350°F for 2 hours, or until the tamal is firm and cooked through.
