Tacos de Canasta
Tacos de Canasta, also known as basket tacos, are a popular street food in Mexico. They are filled with various ingredients and kept warm in a basket, hence the name.
Ingredients - Serves 4
- Onion - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Queso fresco - 1/2 cup, crumbled
- Red salsa - 1/2 cup
- Green salsa - 1/2 cup
- Potatoes - 1/2 cup, cooked and diced
- Chorizo - 1/2 cup, cooked and crumbled
- Refried beans - 1 cup
- Corn tortillas - 12
Let's Get Started
- Warm the tortillas in a skillet over medium heat until they are soft and pliable.
- Spread a spoonful of refried beans on each tortilla.
- Top the beans with a spoonful of cooked chorizo and diced potatoes.
- Fold the tortilla in half to form a taco.
- Repeat with the remaining tortillas and fillings.
- Place the filled tacos in a basket or container lined with a clean cloth towel.
- Drizzle the green and red salsa over the tacos.
- Sprinkle the crumbled queso fresco, chopped cilantro, and chopped onion over the tacos.
- Cover the tacos with the cloth towel to keep them warm until ready to serve.
