Ingredients - Serves 4
- Cilantro - For garnish
- Avocado - 1, sliced
- Queso fresco - 1/4 cup, crumbled
- Mexican crema or sour cream - 1/4 cup
- Tortilla strips - 1 cup
- Dried guajillo chiles - 2, stemmed and seeded
- Chicken broth - 4 cups
- Diced tomatoes - 1 can
- Pinto beans - 1 can
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
- Add the beans, tomatoes, chicken broth, and guajillo chiles. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Use an immersion blender to puree the soup until smooth.
- Serve the soup hot, garnished with tortilla strips, a dollop of crema or sour cream, crumbled queso fresco, avocado slices, and cilantro.
