  1. Rinse the soaked chickpeas and place them in a large pot.
  2. Add the beef bone, pork belly, chorizo, potatoes, carrots, garlic, and onion to the pot.
  3. Fill the pot with water until all the ingredients are covered.
  4. Season with salt and pepper.
  5. Bring the pot to a boil over high heat, then reduce the heat to low and let it simmer for about 2 hours, or until the chickpeas are tender and the flavors are well combined.
  6. Remove the beef bone and chorizo from the pot. Slice the chorizo and return it to the pot.
  7. Serve the stew hot, garnished with fresh parsley if desired.
