Cocido de Garbanzos
Cocido de Garbanzos is a traditional Spanish chickpea stew. This hearty and comforting dish is perfect for cold days.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Onion - 1 large, chopped
- Garlic - 4 cloves, minced
- Carrots - 2, sliced
- Potatoes - 2 large, diced
- Chorizo - 2 pieces
- Pork belly - 200 grams
- Beef bone - 1 piece
- Garbanzos (chickpeas) - 500 grams, soaked overnight
Let's Get Started
- Rinse the soaked chickpeas and place them in a large pot.
- Add the beef bone, pork belly, chorizo, potatoes, carrots, garlic, and onion to the pot.
- Fill the pot with water until all the ingredients are covered.
- Season with salt and pepper.
- Bring the pot to a boil over high heat, then reduce the heat to low and let it simmer for about 2 hours, or until the chickpeas are tender and the flavors are well combined.
- Remove the beef bone and chorizo from the pot. Slice the chorizo and return it to the pot.
- Serve the stew hot, garnished with fresh parsley if desired.
