Tacos al Pastor
Tacos al Pastor is a popular Mexican street food dish made with marinated pork, pineapple, and traditional spices.
Ingredients - Serves 4
- Lime wedges - For serving
- Onion - 1/2 cup, diced
- Cilantro - 1/2 cup, chopped
- Pineapple slices - 1 cup
- Corn tortillas - 12
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 4 cloves, minced
- White vinegar - 1/4 cup
- Pineapple juice - 1/2 cup
- Achiote paste - 2 tablespoons
- Pork shoulder - 2 pounds, thinly sliced
Let's Get Started
- In a bowl, combine the achiote paste, pineapple juice, white vinegar, minced garlic, cumin, oregano, salt, and pepper to make the marinade.
- Add the thinly sliced pork shoulder to the marinade and mix well to coat the meat. Let it marinate for at least 2 hours, or overnight for best results.
- Preheat the grill or a skillet over medium-high heat.
- Cook the marinated pork slices on the grill or skillet for about 5-7 minutes per side, or until cooked through and slightly charred.
- Warm the corn tortillas on the grill or in a dry skillet for a few seconds on each side.
- Assemble the tacos by placing a few slices of cooked pork on each tortilla.
- Top with pineapple slices, chopped cilantro, and diced onion.
- Serve the tacos al pastor with lime wedges on the side.
