T Bone Steak with Grilled Vegetables and Baked Sweet Potato

Ingredients - Serves 2
- Brown sugar - 1 tablespoon
- Butter - 2 tablespoons
- Sweet potatoes - 2, medium-sized
- Mixed vegetables (bell peppers, zucchini, eggplant) - 2 cups, sliced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- T-bone steak - 2 pieces
Let's Get Started
- Preheat the grill to high heat and the oven to 400°F.
- Season the T-bone steaks with salt and pepper on both sides.
- Drizzle the mixed vegetables with 1 tablespoon of olive oil and season with salt and pepper.
- Place the sweet potatoes on a baking sheet and bake for 40 minutes, or until tender.
- While the sweet potatoes are baking, grill the T-bone steaks for about 4-5 minutes on each side for medium-rare.
- Grill the vegetables until they are charred and tender, about 3-4 minutes per side.
- Remove the sweet potatoes from the oven and cut a slit in the top of each one. Add a tablespoon of butter and a sprinkle of brown sugar to each sweet potato.
- Serve the T-bone steaks with the grilled vegetables and baked sweet potatoes on the side.
