Beef Ribs with Blueberry BBQ Sauce

  1. Preheat the oven to 275°F. Season the ribs with salt and pepper.
  2. Heat the olive oil in a saucepan over medium heat. Add the onion and garlic and cook until softened.
  3. Add the blueberries, ketchup, brown sugar, vinegar, Worcestershire sauce, and smoked paprika. Bring to a simmer and cook until the blueberries have broken down and the sauce has thickened.
  4. Place the ribs in a roasting pan and cover with the sauce. Cover the pan with foil and bake for 2.5 hours, or until the ribs are tender.
  5. Remove the foil and increase the oven temperature to 350°F. Bake for another 30 minutes, or until the sauce is caramelized.
  6. Let the ribs rest for a few minutes before serving.
