Beef Ribs with Blueberry BBQ Sauce
Tender beef ribs are smothered in a tangy and sweet blueberry BBQ sauce. This dish is a unique twist on a classic BBQ favorite.
Ingredients - Serves 4
- Smoked paprika - 1 teaspoon
- Worcestershire sauce - 2 tablespoons
- Apple cider vinegar - 1/4 cup
- Brown sugar - 1/2 cup
- Ketchup - 1 cup
- Blueberries - 2 cups
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef ribs - 2 racks
Let's Get Started
- Preheat the oven to 275°F. Season the ribs with salt and pepper.
- Heat the olive oil in a saucepan over medium heat. Add the onion and garlic and cook until softened.
- Add the blueberries, ketchup, brown sugar, vinegar, Worcestershire sauce, and smoked paprika. Bring to a simmer and cook until the blueberries have broken down and the sauce has thickened.
- Place the ribs in a roasting pan and cover with the sauce. Cover the pan with foil and bake for 2.5 hours, or until the ribs are tender.
- Remove the foil and increase the oven temperature to 350°F. Bake for another 30 minutes, or until the sauce is caramelized.
- Let the ribs rest for a few minutes before serving.
