Beef Ribs with Raspberry Chipotle Sauce
Tender beef ribs are slow-cooked and basted with a tangy, sweet, and spicy raspberry chipotle sauce.
Ingredients - Serves 4
- Brown sugar - 1/4 cup
- Apple cider vinegar - 1/4 cup
- Raspberry preserves - 1 cup
- Chipotle peppers in adobo sauce - 2 peppers, minced
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef ribs - 2 racks
Let's Get Started
- Preheat the oven to 275°F. Season the ribs with salt and pepper.
- Heat the olive oil in a large oven-safe pot over medium heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
- In the same pot, add the garlic and chipotle peppers and cook until fragrant, about 1 minute.
- Add the raspberry preserves, vinegar, and brown sugar. Stir until the sugar is dissolved.
- Return the ribs to the pot and spoon some of the sauce over them. Cover the pot and transfer to the oven.
- Cook for 2.5 to 3 hours, or until the ribs are tender. Baste with the sauce every 30 minutes.
- Remove the ribs from the oven and let rest for 10 minutes before serving.
