Beef Ribs with Raspberry Chipotle Sauce

Let's Get Started

  1. Preheat the oven to 275°F. Season the ribs with salt and pepper.
  2. Heat the olive oil in a large oven-safe pot over medium heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
  3. In the same pot, add the garlic and chipotle peppers and cook until fragrant, about 1 minute.
  4. Add the raspberry preserves, vinegar, and brown sugar. Stir until the sugar is dissolved.
  5. Return the ribs to the pot and spoon some of the sauce over them. Cover the pot and transfer to the oven.
  6. Cook for 2.5 to 3 hours, or until the ribs are tender. Baste with the sauce every 30 minutes.
  7. Remove the ribs from the oven and let rest for 10 minutes before serving.
