Swiss Chard and Fennel Soup

Ingredients - Serves 6
- Lemon juice - 1 tablespoon
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Cannellini beans - 1 can (15 oz), drained and rinsed
- Vegetable broth - 4 cups
- Swiss chard - 1 bunch, stems removed and leaves chopped
- Garlic - 3 cloves, minced
- Fennel bulb - 1 large, thinly sliced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, fennel, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the Swiss chard and cook until wilted, about 3 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
- Add the cannellini beans and dried thyme. Season with salt and pepper to taste.
- Simmer for another 10 minutes to allow the flavors to meld together.
- Stir in the lemon juice just before serving.
