Sweet Pongal
Sweet Pongal is a delicious South Indian dish made with rice, moong lentils, ghee, jaggery or sugar, cardamom powder and nuts. It is a traditional dish prepared during festivals like Makar Sankranti.
Ingredients - Serves 4
- Raisins - 1 tablespoon
- Cashews - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Water - 2.5 cups
- Jaggery - 3/4 cup
- Ghee - 2 tablespoons
- Moong lentils - 1/4 cup
- Rice - 1/2 cup
Let's Get Started
- Wash the rice and moong lentils together. Add them to a pressure cooker with 2.5 cups of water.
- Pressure cook for 4 whistles on medium flame. Let the pressure release naturally.
- In a pan, add ghee. When it's hot, add the cashews and raisins. Fry until the cashews are golden brown and the raisins are puffed up. Remove them from the pan and set aside.
- In the same pan, add the jaggery and a little water. Let it melt and come to a boil.
- Add the cooked rice and lentils to the jaggery syrup. Mix well and let it cook for 5 minutes on low flame.
- Add the cardamom powder and mix well.
- Finally, add the fried cashews and raisins. Mix well and turn off the flame.
- Sweet Pongal is ready to serve.
