Nei Choru
Nei Choru or Ghee Rice is a simple and delicious dish from South India. It's a flavorful rice dish cooked with ghee, spices, and nuts.
Ingredients - Serves 4
- Raisins - A handful
- Cashew nuts - A handful
- Salt - To taste
- Water - 4 cups
- Bay leaf - 1
- Cinnamon stick - 1 small
- Cloves - 4
- Cardamom - 4 pods
- Ginger garlic paste - 1 tablespoon
- Green chillies - 2, slit
- Onions - 2, thinly sliced
- Ghee - 4 tablespoons
- Basmati rice - 2 cups
Let's Get Started
- Wash the basmati rice and soak it in water for 30 minutes.
- Heat 2 tablespoons of ghee in a pan and fry the cashew nuts and raisins until golden. Remove and set aside.
- In the same pan, add the remaining ghee and add the sliced onions, green chillies, ginger garlic paste, cardamom, cloves, cinnamon stick, and bay leaf. Saute until the onions turn golden brown.
- Drain the rice and add it to the pan. Saute for a few minutes until the rice is well coated with the ghee and spices.
- Add water and salt, bring to a boil, then reduce the heat to low, cover the pan, and cook until the rice is done.
- Fluff the rice with a fork, garnish with the fried cashew nuts and raisins, and serve hot.
