Kheer
Kheer is a traditional Indian dessert made with rice, milk, and sugar, flavored with cardamom, raisins, saffron, cashews, pistachios, or almonds.
Ingredients - Serves 4
- Saffron strands - A few
- Almonds - 2 tablespoons
- Cashews - 2 tablespoons
- Raisins - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Sugar - 1/2 cup
- Whole milk - 1 litre
- Basmati rice - 1/4 cup
Let's Get Started
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, bring the milk to a boil. Add the drained rice and cook on low heat, stirring occasionally, until the rice is soft and the milk is reduced by half.
- Add the sugar and stir until it is fully dissolved.
- Add the cardamom powder, raisins, cashews, almonds, and saffron strands. Stir well.
- Cook for another 5-10 minutes, until the kheer thickens to your desired consistency.
- Serve the kheer warm or chilled, garnished with a few more nuts and saffron strands if desired.
