Let's Get Started

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, bring the milk to a boil. Add the drained rice and cook on low heat, stirring occasionally, until the rice is soft and the milk is reduced by half.
  3. Add the sugar and stir until it is fully dissolved.
  4. Add the cardamom powder, raisins, cashews, almonds, and saffron strands. Stir well.
  5. Cook for another 5-10 minutes, until the kheer thickens to your desired consistency.
  6. Serve the kheer warm or chilled, garnished with a few more nuts and saffron strands if desired.
