Sweet and Sour Shrimp
A delightful dish of shrimp tossed in a tangy sauce with bell peppers, onions, and pineapple.
Ingredients - Serves 4
- Soy sauce - 2 tablespoons
- Brown sugar - 1/4 cup
- Vinegar - 1/4 cup
- Ketchup - 1/4 cup
- Pineapple chunks - 1 cup
- Onion - 1, cut into chunks
- Bell peppers - 2, cut into chunks
- Vegetable oil - 2 tablespoons
- Cornstarch - 1/4 cup
- Salt and pepper - To taste
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Season the shrimp with salt and pepper, then toss in the cornstarch until well coated.
- Heat the oil in a large pan over medium-high heat. Add the shrimp and cook until pink, about 2 minutes per side. Remove from the pan and set aside.
- In the same pan, add the bell peppers and onion and cook until tender, about 5 minutes.
- Add the pineapple, ketchup, vinegar, brown sugar, and soy sauce to the pan. Stir until the sauce is heated through and thickened, about 2 minutes.
- Return the shrimp to the pan and toss to coat in the sauce. Cook for another 2 minutes, until the shrimp is heated through.
- Serve the sweet and sour shrimp over rice, if desired.
