  1. In a large pot, combine the chicken thighs, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  2. While the chicken is cooking, cook the rice according to the package instructions.

  4. Once the chicken is cooked, remove the bay leaves and peppercorns. Increase the heat and cook for an additional 10 minutes, until the sauce is reduced.
