Filipino Adobo Chicken Bowl
A delicious and hearty bowl featuring the classic Filipino Adobo chicken, served over rice with a side of veggies.
Ingredients - Serves 4
- Mixed vegetables - 2 cups, your choice
- Vegetable oil - 2 tablespoons
- White rice - 2 cups
- Black peppercorns - 1 teaspoon
- Bay leaves - 2
- Garlic - 6 cloves, minced
- Vinegar - 1/2 cup
- Soy sauce - 1/2 cup
- Chicken thighs - 8, bone-in, skin-on
Let's Get Started
- In a large pot, combine the chicken thighs, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- While the chicken is cooking, cook the rice according to the package instructions.
- In a separate pan, heat the vegetable oil over medium heat. Add the mixed vegetables and cook until tender.
- Once the chicken is cooked, remove the bay leaves and peppercorns. Increase the heat and cook for an additional 10 minutes, until the sauce is reduced.
- To serve, divide the rice among four bowls. Top with the chicken and sauce, and serve the vegetables on the side.
