Sweet and Sour Chicken
This delicious sweet and sour chicken is made with crispy chicken pieces, colorful bell peppers, and a tangy sauce.
Ingredients - Serves 4
- Green onions - 2, sliced (for garnish)
- Rice - 2 cups, cooked
- Sweet and sour sauce - 1 cup
- Pineapple chunks - 1 cup
- Bell peppers - 1 red and 1 green, sliced
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cornstarch - 1/2 cup
- Chicken breast - 2, boneless and skinless, cut into bite-sized pieces
Let's Get Started
- In a bowl, season the chicken pieces with salt and pepper.
- Coat the chicken pieces with cornstarch, shaking off any excess.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and cook until golden and crispy, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and cook until slightly softened, about 3-4 minutes.
- Add the pineapple chunks and sweet and sour sauce to the skillet.
- Return the cooked chicken to the skillet and stir to coat everything in the sauce.
- Cook for an additional 2-3 minutes, until the sauce is heated through.
- Serve the sweet and sour chicken over cooked rice.
- Garnish with sliced green onions.
