Buffalo Chicken Fries
Spicy buffalo chicken served over crispy fries and topped with blue cheese. A perfect game day snack!
Ingredients - Serves 4
- Green onions - 2, sliced
- Blue cheese - 1/2 cup, crumbled
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Potatoes - 4 large, cut into fries
- Buffalo sauce - 1/2 cup
- Chicken breast - 2, boneless and skinless
Let's Get Started
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the potatoes with the olive oil, salt, and pepper and spread out on the baking sheet.
- Bake for 25-30 minutes, or until crispy and golden.
- While the fries are baking, cook the chicken in a skillet over medium heat until no longer pink.
- Shred the chicken and toss with the buffalo sauce.
- Once the fries are done, top with the buffalo chicken, blue cheese, and green onions.
- Return to the oven for 5 minutes, or until the cheese is melted.
- Serve hot with extra buffalo sauce on the side.
