Kimchi Bokkeumbap

Ingredients - Serves 4
- Fried egg - 1 per serving (optional)
- Roasted sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Vegetable oil - 1 tablespoon
- Sesame oil - 2 tablespoons
- Kimchi juice - 1/4 cup
- Kimchi - 1 cup, chopped
- Cooked rice - 3 cups
Let's Get Started
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and minced garlic to the pan and sauté until they start to soften.
- Add the chopped kimchi and kimchi juice to the pan and stir-fry for about 5 minutes.
- Add the cooked rice to the pan and break up any clumps. Stir-fry for a few minutes until the rice is heated through.
- Drizzle the soy sauce and sesame oil over the rice and mix well.
- Add the chopped green onions and stir-fry for another minute.
- Serve the kimchi fried rice in bowls, topped with a fried egg (if using) and sprinkled with roasted sesame seeds.
