Let's Get Started

  1. Rinse the glutinous rice under cold water until the water runs clear. Drain well.
  2. In a large pot, combine the glutinous rice, coconut milk, sugar, vanilla extract, salt, and water. Stir well.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove the pot from the heat and let it sit, covered, for 10 minutes.
  5. Meanwhile, melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth.
  6. Fluff the cooked rice with a fork, then transfer it to a serving dish.
  7. Drizzle the melted chocolate over the rice and sprinkle with grated coconut.
  8. Serve warm or chilled. Enjoy!
