Bolo de Aipim Com Coco
A traditional Brazilian dessert, Bolo de Aipim com Coco is a moist and flavorful cake made with cassava and coconut.
Ingredients - Serves 8
- Condensed milk - 1 can
- Grated coconut - 1 cup
- Coconut milk - 200 ml
- Eggs - 2
- Butter - 100g, melted
- Sugar - 2 cups
- Cassava - 1 kg, peeled and grated
Let's Get Started
- Preheat the oven to 180°C (350°F) and grease a baking dish.
- In a large bowl, combine the grated cassava, sugar, melted butter, eggs, coconut milk, and grated coconut. Mix well.
- Pour the mixture into the prepared baking dish and smooth the top with a spatula.
- Bake for about 1 hour, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and while it's still hot, pour the condensed milk over the top.
- Let the cake cool completely before cutting into squares and serving.
