Bolo de Mandioca
Bolo de Mandioca, also known as Cassava Cake, is a traditional Brazilian dessert made with grated cassava, coconut milk, and sweetened condensed milk.
Ingredients - Serves 8
- Grated coconut - 1 cup
- Eggs - 2
- Sweetened condensed milk - 1 can
- Coconut milk - 200 ml
- Butter - 100g, melted
- Sugar - 2 cups
- Grated cassava - 1 kg
Let's Get Started
- Preheat the oven to 180°C (350°F) and grease a baking dish with butter.
- In a large bowl, combine the grated cassava, sugar, melted butter, coconut milk, sweetened condensed milk, eggs, and half of the grated coconut.
- Pour the mixture into the prepared baking dish and sprinkle the remaining grated coconut on top.
- Bake for about 60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool before cutting into squares and serving.
