Appam is a type of pancake, originating from the Indian subcontinent, made with fermented rice batter and coconut milk. It is a popular food in the South Indian state of Kerala.

Ingredients - Serves 4

Let's Get Started

  1. Soak the raw rice in water for 4-5 hours.
  2. Drain the water and grind the rice along with cooked rice and grated coconut into a smooth paste.
  3. Dissolve the yeast and sugar in warm water and let it rest for 10 minutes until it becomes frothy.
  4. Add this yeast mixture to the rice paste and mix well.
  5. Cover the batter and let it ferment for 8 hours or overnight.
  6. After fermentation, add salt to the batter and mix well.
  7. Heat an appam pan on medium heat. Pour a ladle full of batter in the center of the pan and swirl the pan to spread the batter in a circular motion.
  8. Cover the pan and cook the appam on medium heat for 2 minutes until the edges become golden brown and crispy.
  9. Remove the appam from the pan and serve hot with coconut milk or vegetable stew.
