Appam
Appam is a type of pancake, originating from the Indian subcontinent, made with fermented rice batter and coconut milk. It is a popular food in the South Indian state of Kerala.
Ingredients - Serves 4
- Warm water - 1/4 cup
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Dry yeast - 1/2 teaspoon
- Grated coconut - 1/2 cup
- Cooked rice - 1/2 cup
- Raw white rice - 1 cup
Let's Get Started
- Soak the raw rice in water for 4-5 hours.
- Drain the water and grind the rice along with cooked rice and grated coconut into a smooth paste.
- Dissolve the yeast and sugar in warm water and let it rest for 10 minutes until it becomes frothy.
- Add this yeast mixture to the rice paste and mix well.
- Cover the batter and let it ferment for 8 hours or overnight.
- After fermentation, add salt to the batter and mix well.
- Heat an appam pan on medium heat. Pour a ladle full of batter in the center of the pan and swirl the pan to spread the batter in a circular motion.
- Cover the pan and cook the appam on medium heat for 2 minutes until the edges become golden brown and crispy.
- Remove the appam from the pan and serve hot with coconut milk or vegetable stew.
