Ingredients - Serves 4

  1. In a mixing bowl, combine the whole wheat flour, water, and salt. Knead into a smooth dough. Cover and let it rest for 15 minutes.
  2. In a separate bowl, mix together the mashed potatoes, chopped onion, green chili, cilantro, cumin powder, coriander powder, red chili powder, garam masala, and salt.
  3. Divide the dough into equal-sized balls. Take one ball and roll it into a small circle.
  4. Place a spoonful of the potato filling in the center of the circle. Bring the edges together and seal the filling inside the dough.
  5. Gently flatten the stuffed ball and roll it out into a paratha, about 6-7 inches in diameter.
  6. Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook for a minute or until bubbles start to appear.
  7. Flip the paratha and spread some ghee or oil on top. Cook for another minute, then flip again and spread ghee or oil on the other side.
  8. Press the paratha with a spatula to ensure it cooks evenly. Cook until both sides are golden brown and crispy.
  9. Remove from the tawa and repeat the process with the remaining dough and filling.
  10. Serve hot with yogurt, pickle, or any chutney of your choice.
