Stuffed Duck
A succulent, roasted duck stuffed with a delicious fruit and nut stuffing.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Chicken broth - 1/2 cup
- Chopped pecans - 1/2 cup
- Dried cranberries - 1/2 cup
- Bread crumbs - 2 cups
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Onion - 1, chopped
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Whole duck - 1 (4 to 5 pounds)
Let's Get Started
- Preheat the oven to 350°F. Season the duck inside and out with salt and pepper.
- In a large skillet, melt the butter over medium heat. Add the onion, celery, and garlic and cook until softened.
- Stir in the bread crumbs, cranberries, pecans, chicken broth, and parsley. Remove from heat.
- Stuff the duck with the bread crumb mixture and place in a roasting pan.
- Roast for 2 hours, or until the duck is cooked through and the skin is crispy.
- Let the duck rest for 10 minutes before carving and serving.
