Stir Fried Tofu with Yangzhou Fried Rice
A delicious combination of stir-fried tofu and Yangzhou fried rice, a classic Chinese dish known for its generous use of ingredients.
Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Green onions - 2, chopped
- Peas - 1/2 cup
- Carrots - 1, diced
- Eggs - 2, beaten
- Cooked rice - 4 cups
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Tofu - 1 block, cubed
Let's Get Started
- Marinate the tofu in soy sauce and sesame oil for 15 minutes.
- Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the tofu and stir-fry until golden brown. Remove from the pan and set aside.
- In the same pan, add the remaining oil and scramble the eggs. Remove from the pan and set aside.
- Add the carrots and peas to the pan and stir-fry until tender.
- Add the cooked rice to the pan and stir-fry for a few minutes until heated through.
- Return the tofu and eggs to the pan, add the green onions, and stir-fry for another minute.
- Serve the stir-fried tofu with the Yangzhou fried rice.
