Let's Get Started

  1. In a bowl, beat the eggs and fish sauce together until well combined.
  2. Heat the oil in a non-stick frying pan over medium-high heat.
  3. Pour the egg mixture into the pan and spread it out evenly.
  4. Sprinkle the chopped green onions over the top of the egg mixture.
  5. Cook for about 2-3 minutes, or until the bottom is golden brown and crispy.
  6. Flip the omelette and cook for another 2-3 minutes, or until the other side is golden brown and crispy.
  7. Serve the omelette over cooked jasmine rice, garnished with cilantro and served with Sriracha sauce on the side.
