Spicy Thai Peanut Chicken

Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Green onions - 2, sliced
- Peanuts - 1/4 cup, crushed
- Red pepper flakes - 1/2 teaspoon
- Honey - 1 tablespoon
- Peanut butter - 2 tablespoons
- Soy sauce - 2 tablespoons
- Carrot - 1, sliced
- Red bell pepper - 1, sliced
- Garlic - 2 cloves, minced
- Chicken breasts - 2, cut into strips
Let's Get Started
- Heat the oil in a large pan over medium heat.
- Add the chicken and cook until it's no longer pink. Remove it from the pan and set it aside.
- In the same pan, add the garlic, red bell pepper, and carrot. Cook until they're tender.
- In a small bowl, mix together the soy sauce, peanut butter, honey, and red pepper flakes.
- Add the sauce to the pan and stir to coat the vegetables.
- Add the chicken back to the pan and stir to coat it with the sauce.
- Cook for a few more minutes until everything is heated through.
- Top with the crushed peanuts and green onions before serving.
