Katsudon Bowl
Katsudon is a popular Japanese dish consisting of a breaded and deep-fried pork cutlet served over a bowl of rice and topped with a sweet and savory sauce and beaten eggs.
Ingredients - Serves 2
- Cooked rice - 2 cups
- Green onions - 2, chopped
- Sugar - 1 tablespoon
- Mirin - 2 tablespoons
- Soy sauce - 2 tablespoons
- Dashi stock - 1 cup
- Onion - 1, thinly sliced
- Cooking oil - 1/4 cup
- Panko breadcrumbs - 1 cup
- Eggs - 3, beaten
- Pork loin - 2 pieces, boneless
Let's Get Started
- Pound the pork loin pieces to flatten them to about 1/4-inch thickness.
- Season the pork with salt and pepper.
- Dip each piece of pork into the beaten eggs, then coat with panko breadcrumbs.
- Heat the cooking oil in a large skillet over medium heat.
- Fry the breaded pork until golden brown and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion and cook until softened.
- Add the dashi stock, soy sauce, mirin, and sugar to the skillet. Bring to a simmer.
- Pour the beaten eggs over the simmering sauce and onion mixture. Let it cook for a few seconds until the eggs start to set.
- Place a portion of cooked rice in each serving bowl.
- Top the rice with the breaded pork cutlets.
- Pour the sauce and egg mixture over the pork and rice.
- Garnish with chopped green onions.
- Serve hot and enjoy!
