Let's Get Started

  1. Pound the pork loin pieces to flatten them to about 1/4-inch thickness.
  2. Season the pork with salt and pepper.
  3. Dip each piece of pork into the beaten eggs, then coat with panko breadcrumbs.
  4. Heat the cooking oil in a large skillet over medium heat.
  5. Fry the breaded pork until golden brown and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
  6. In the same skillet, add the sliced onion and cook until softened.
  7. Add the dashi stock, soy sauce, mirin, and sugar to the skillet. Bring to a simmer.
  8. Pour the beaten eggs over the simmering sauce and onion mixture. Let it cook for a few seconds until the eggs start to set.
  9. Place a portion of cooked rice in each serving bowl.
  10. Top the rice with the breaded pork cutlets.
  11. Pour the sauce and egg mixture over the pork and rice.
  12. Garnish with chopped green onions.
  13. Serve hot and enjoy!
