Stir Fried Tofu with Cashews
A delicious and healthy stir fry dish with tofu, cashews, and vegetables.
Ingredients - Serves 4
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons water
- Vegetables - 2 cups, your choice
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Cashews - 1 cup, roasted
- Tofu - 1 block, drained and cubed
Let's Get Started
- Heat the oil in a large pan over medium heat.
- Add the tofu and cook until golden brown on all sides, about 10 minutes. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the vegetables and cook until tender, about 5 minutes.
- Add the soy sauce and cornstarch mixture and stir until the sauce thickens.
- Return the tofu to the pan and add the cashews. Stir until everything is well coated in the sauce.
- Serve hot with rice or noodles.
