Steamed Mandarin Fish

Ingredients - Serves 4
- Salt - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Scallions - 2, cut into 2-inch pieces
- Fresh ginger - 1 inch piece, peeled and thinly sliced
- Soy sauce - 2 tablespoons
- Mandarin fish - 1 whole, cleaned and scaled
Let's Get Started
- Rinse the fish under cold water and pat dry with paper towels. Make a few diagonal cuts on each side of the fish.
- Rub the fish inside and out with the salt.
- Place the fish on a heatproof plate and stuff the ginger slices and half of the scallions inside the fish.
- Drizzle the soy sauce and vegetable oil over the fish.
- Prepare a steamer and bring the water to a boil. Place the plate with the fish in the steamer.
- Cover and steam the fish over high heat for about 15 minutes, or until the fish is cooked through.
- Remove the plate from the steamer and garnish with the remaining scallions.
- Serve the fish hot with steamed rice.
