Let's Get Started

  1. Rinse the fish under cold water and pat dry with paper towels. Make a few diagonal cuts on each side of the fish.
  2. Rub the fish inside and out with the salt.
  3. Place the fish on a heatproof plate and stuff the ginger slices and half of the scallions inside the fish.
  4. Drizzle the soy sauce and vegetable oil over the fish.
  5. Prepare a steamer and bring the water to a boil. Place the plate with the fish in the steamer.
  6. Cover and steam the fish over high heat for about 15 minutes, or until the fish is cooked through.
  7. Remove the plate from the steamer and garnish with the remaining scallions.
  8. Serve the fish hot with steamed rice.
