Steamed Glutinous Rice Stuffed in Lotus Leaf
A traditional Chinese dim sum dish, featuring sticky rice and a savory filling wrapped in a fragrant lotus leaf.
Ingredients - Serves 4
- Sesame oil - 1 tablespoon
- White pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Chinese sausage - 2, diced
- Dried shrimp - 1/4 cup
- Dried shiitake mushrooms - 8
- Dried lotus leaves - 4
- Glutinous rice - 2 cups
Let's Get Started
- Soak the glutinous rice, lotus leaves, shiitake mushrooms, and dried shrimp in separate bowls of water overnight.
- Drain the soaked ingredients. Dice the mushrooms and set aside.
- In a large pan, stir-fry the Chinese sausage until it releases its oil. Add the mushrooms and shrimp and continue to stir-fry.
- Add the drained rice to the pan and stir well to combine with the other ingredients. Add the oyster sauce, soy sauce, sugar, salt, and white pepper. Stir well to evenly distribute the seasonings.
- Remove the pan from heat and stir in the sesame oil.
- Divide the rice mixture among the soaked lotus leaves, placing it in the center. Fold the leaves over the rice to form a square package, and tie with kitchen string to secure.
- Steam the packages over high heat for 2 hours, adding more water to the steamer as necessary.
- Allow the packages to cool slightly before unwrapping and serving.
