Spotted Dick
Spotted dick is a traditional British pudding made with suet and dried fruit, usually served with custard.
Ingredients - Serves 6
- Butter - For greasing
- Lemon zest - 1 lemon
- Egg - 1
- Milk - 150ml
- Currants - 100g
- Caster sugar - 100g
- Self-raising flour - 225g
- Suet - 225g
Let's Get Started
- Grease a 1.2 litre pudding basin with butter.
- Mix together the suet, flour, sugar, currants, and lemon zest in a large bowl.
- In a separate bowl, whisk together the milk and egg.
- Add the milk and egg mixture to the dry ingredients and stir until well combined.
- Spoon the mixture into the prepared pudding basin and smooth the top.
- Cover the basin with a layer of greaseproof paper and a layer of foil, both pleated in the middle to allow for expansion.
- Tie the paper and foil securely with string.
- Place the pudding basin in a large saucepan and pour in enough boiling water to come halfway up the sides of the basin.
- Cover the saucepan with a lid and simmer for 1.5 hours, topping up the water as necessary.
- Remove the pudding basin from the saucepan and let it cool for a few minutes before turning it out onto a serving plate.
- Serve hot with custard.
