Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 350°F (175°C).
  2. Brush the bottom of a baking dish with melted butter and layer 6 sheets of phyllo, brushing each with butter.
  3. To make the custard, heat the milk and sugar in a saucepan until hot but not boiling. Slowly whisk in the semolina until smooth. Remove from heat.
  4. In a separate bowl, beat the eggs. Gradually add the eggs to the semolina mixture, whisking constantly. Add the vanilla extract and lemon zest.
  5. Pour the custard over the phyllo in the baking dish. Top with the remaining 6 sheets of phyllo, brushing each with butter.
  6. Bake for 45 minutes, or until the phyllo is golden brown.
  7. While the pie is baking, make the syrup by combining the sugar, water, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
  8. Pour the hot syrup over the pie as soon as it comes out of the oven. Let it cool before serving.
