Sea Cliff Savoury Crepes
These savoury crepes filled with fresh seafood and creamy sauce are a delightful main course that brings a touch of elegance to any table.
Ingredients - Serves 4
- Lemon zest - 1 teaspoon
- Fresh dill - 1 tablespoon, chopped
- Cream cheese - 1/2 cup
- Mixed seafood - 2 cups
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons, melted
- Milk - 1 1/2 cups
- Eggs - 2
- All-purpose flour - 1 cup
Let's Get Started
- In a large mixing bowl, combine the flour, eggs, milk, melted butter, and salt. Whisk until smooth.
- Heat a non-stick frying pan over medium heat. Pour 1/4 of the batter into the pan and tilt the pan to spread the batter evenly. Cook until the crepe is lightly browned on the bottom, then flip and cook the other side. Repeat with the remaining batter.
- In a separate pan, cook the mixed seafood until it is fully cooked.
- In a small bowl, combine the cream cheese, dill, and lemon zest.
- Spread a quarter of the cream cheese mixture onto each crepe. Top with the cooked seafood.
- Fold the crepes in half and serve warm.
