Spicy Peanut Tofu Stir Fry

Let's Get Started

  1. Heat the oil in a large pan over medium heat. Add the tofu and cook until golden on all sides. Remove from the pan and set aside.
  2. In the same pan, add the vegetables and garlic. Cook until the vegetables are tender.
  3. In a small bowl, whisk together the peanut butter, soy sauce, sriracha, lime juice, and brown sugar. Pour the sauce into the pan with the vegetables.
  4. Add the cornstarch mixture to the pan and stir to combine. The sauce should start to thicken.
  5. Return the tofu to the pan and stir to coat in the sauce. Cook for a few more minutes until everything is heated through.
  6. Serve the stir fry over rice or noodles, if desired.
