Spicy Peanut Tofu Stir Fry
A flavorful stir fry dish with tofu, vegetables, and a spicy peanut sauce.
Ingredients - Serves 4
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons water
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Sriracha - 1 tablespoon
- Soy sauce - 2 tablespoons
- Peanut butter - 1/4 cup
- Garlic - 2 cloves, minced
- Mixed vegetables - 4 cups, chopped (e.g. bell peppers, broccoli, carrots)
- Vegetable oil - 2 tablespoons
- Extra firm tofu - 1 block, pressed and cubed
Let's Get Started
- Heat the oil in a large pan over medium heat. Add the tofu and cook until golden on all sides. Remove from the pan and set aside.
- In the same pan, add the vegetables and garlic. Cook until the vegetables are tender.
- In a small bowl, whisk together the peanut butter, soy sauce, sriracha, lime juice, and brown sugar. Pour the sauce into the pan with the vegetables.
- Add the cornstarch mixture to the pan and stir to combine. The sauce should start to thicken.
- Return the tofu to the pan and stir to coat in the sauce. Cook for a few more minutes until everything is heated through.
- Serve the stir fry over rice or noodles, if desired.
