  4. Add the lentils, vegetable broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
  5. While the lentils are cooking, poach the eggs in a separate pan.
  6. Serve the lentils in bowls, topped with a poached egg and a sprinkle of fresh parsley.
