Spiced Lentils with Poached Eggs

- Fresh parsley - For garnish
- Eggs - 4
- Salt and pepper - To taste
- Vegetable broth - 2 cups
- Red lentils - 1 cup
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the cumin and coriander and cook for another minute.
- Add the lentils, vegetable broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
- While the lentils are cooking, poach the eggs in a separate pan.
- Serve the lentils in bowls, topped with a poached egg and a sprinkle of fresh parsley.
