Ingredients - Serves 4
- Fresh parsley - For garnish
- Garlic yogurt sauce - 1 cup
- Red onion - 1, thinly sliced
- Tomatoes - 2, diced
- Cucumber - 1, diced
- Quinoa - 1 cup
- Salt and pepper - To taste
- Shawarma spice blend - 2 tablespoons
- Olive oil - 2 tablespoons
- Chickpeas - 2 cans, drained and rinsed
Let's Get Started
- Preheat the oven to 400°F.
- Toss the chickpeas with the olive oil, shawarma spice blend, salt, and pepper. Spread them out on a baking sheet and roast for 20 minutes, or until crispy.
- While the chickpeas are roasting, cook the quinoa according to the package instructions.
- Prepare the garlic yogurt sauce by mixing together yogurt, minced garlic, lemon juice, and a pinch of salt.
- To assemble the bowls, divide the quinoa between four bowls. Top with the roasted chickpeas, cucumber, tomatoes, and red onion.
- Drizzle the garlic yogurt sauce over the top and garnish with fresh parsley.
