Spaghetti Con Le Sarde

- Salt and pepper - To taste
- Olive oil - 4 tablespoons
- Saffron - A pinch
- Anchovy fillets - 4
- Onion - 1, chopped
- Raisins - 50 grams
- Pine nuts - 50 grams
- Fennel - 2 bulbs, chopped
- Fresh sardines - 500 grams, cleaned and filleted
- Spaghetti - 400 grams
Let's Get Started
- Soak the raisins in warm water for 10 minutes, then drain.
- Heat the olive oil in a large pan over medium heat. Add the onion and fennel and cook until softened.
- Add the anchovy fillets and sardines to the pan and cook until the sardines are cooked through.
- Add the pine nuts, raisins, and saffron to the pan and stir to combine.
- In a large pot of boiling salted water, cook the spaghetti until al dente. Drain, reserving some of the pasta water.
- Add the cooked spaghetti to the pan with the sardine mixture and toss to combine. Add some of the reserved pasta water if needed to loosen the sauce.
- Season with salt and pepper to taste. Serve hot.
