Spaghetti Allamatriciana
Spaghetti all'Amatriciana is a classic Italian pasta dish made with pancetta, tomatoes, onions, and pecorino cheese.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Pecorino cheese - 1/2 cup, grated
- Red pepper flakes - 1/2 teaspoon
- Canned tomatoes - 1 can (14 ounces)
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Pancetta - 4 ounces, diced
- Spaghetti - 12 ounces
Let's Get Started
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, cook the pancetta over medium heat until crispy. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.
- In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent and slightly caramelized.
- Add the canned tomatoes and red pepper flakes to the skillet. Simmer for 10 minutes, breaking up the tomatoes with a spoon.
- Return the cooked pancetta to the skillet and stir to combine. Season with salt and pepper to taste.
- Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce.
- Serve the spaghetti all'Amatriciana hot, garnished with grated pecorino cheese and chopped fresh parsley.
