  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, cook the pancetta over medium heat until crispy. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.
  3. In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent and slightly caramelized.
  4. Add the canned tomatoes and red pepper flakes to the skillet. Simmer for 10 minutes, breaking up the tomatoes with a spoon.
  5. Return the cooked pancetta to the skillet and stir to combine. Season with salt and pepper to taste.
  6. Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce.
  7. Serve the spaghetti all'Amatriciana hot, garnished with grated pecorino cheese and chopped fresh parsley.
