Yemista
Yemista is a traditional Greek dish that features bell peppers and tomatoes stuffed with a flavorful mixture of rice and herbs, then baked to perfection.
Ingredients - Serves 6
- Salt and pepper - To taste
- Fresh mint - 2 tablespoons, chopped
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 1/4 cup
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Long-grain white rice - 1 cup, uncooked
- Tomatoes - 6, tops removed and pulp scooped out
- Bell peppers - 6, tops removed and seeds scooped out
Let's Get Started
- Preheat your oven to 375°F (190°C).
- In a large pan, sauté the onion and garlic in olive oil until soft.
- Add the rice to the pan and cook for a few minutes until it becomes translucent.
- Stir in the tomato pulp, parsley, mint, salt, and pepper. Cook for another 5 minutes.
- Stuff the peppers and tomatoes with the rice mixture, replace the tops, and arrange in a baking dish.
- Drizzle with a little more olive oil and bake for about 1 hour, until the vegetables are soft and the rice is cooked.
- Serve the yemista hot, with a slice of feta cheese and a piece of crusty bread if desired.
