  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, sauté the onion and garlic in olive oil until soft.
  3. Add the rice to the pan and cook for a few minutes until it becomes translucent.
  4. Stir in the tomato pulp, parsley, mint, salt, and pepper. Cook for another 5 minutes.
  5. Stuff the peppers and tomatoes with the rice mixture, replace the tops, and arrange in a baking dish.
  6. Drizzle with a little more olive oil and bake for about 1 hour, until the vegetables are soft and the rice is cooked.
  7. Serve the yemista hot, with a slice of feta cheese and a piece of crusty bread if desired.
