  1. In a large bowl, dissolve yeast in warm water. Add the sugar and let stand for 5 minutes.
  2. Add salt and enough flour to form a soft dough.
  3. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  4. Punch dough down; return to bowl. Cover and let rise for 30 minutes.
  5. Punch dough down. Turn onto a lightly floured surface; divide dough into four portions. Shape each into a round loaf. Place on greased baking sheets sprinkled with cornmeal. Cover and let rise until doubled, about 30 minutes.
  6. Bake at 500° for 15 minutes. Reduce heat to 375°; bake 20 minutes longer or until golden brown. Cut a thin slice off the top of bread. Hollow out bottom half, leaving a 1/4-in. shell (discard removed bread or save for another use). Fill with hot soup.
