English Muffins
Homemade English muffins are a real treat for breakfast or brunch. They're delicious toasted and spread with butter or used to make a hearty sandwich.
Ingredients - Serves 12
- Cornmeal - For dusting
- All-purpose flour - 3 cups
- Salt - 1/2 teaspoon
- Butter - 2 tablespoons, melted
- Active dry yeast - 2 1/4 teaspoons
- Sugar - 2 teaspoons
- Milk - 1 cup
Let's Get Started
- Warm the milk until it's lukewarm. Add the sugar and yeast, stir to dissolve, and let sit for 5 minutes until it's frothy.
- In a large bowl, combine the yeast mixture, melted butter, salt, and 2 cups of the flour. Stir until smooth.
- Gradually add the remaining flour, stirring until the dough comes together.
- Knead the dough on a floured surface for about 10 minutes, until it's smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until it's doubled in size.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and flatten slightly.
- Dust a baking sheet with cornmeal and place the dough rounds on it. Cover and let rise for another 30 minutes.
- Heat a griddle or large skillet over medium heat. Cook the muffins for about 10 minutes on each side, or until they're golden brown and cooked through.
