Let's Get Started

  1. Warm the milk until it's lukewarm. Add the sugar and yeast, stir to dissolve, and let sit for 5 minutes until it's frothy.
  2. In a large bowl, combine the yeast mixture, melted butter, salt, and 2 cups of the flour. Stir until smooth.
  3. Gradually add the remaining flour, stirring until the dough comes together.
  4. Knead the dough on a floured surface for about 10 minutes, until it's smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until it's doubled in size.
  6. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and flatten slightly.
  7. Dust a baking sheet with cornmeal and place the dough rounds on it. Cover and let rise for another 30 minutes.
  8. Heat a griddle or large skillet over medium heat. Cook the muffins for about 10 minutes on each side, or until they're golden brown and cooked through.
