Soupe de Poireaux
Soupe de Poireaux, also known as Leek Soup, is a classic French soup made with leeks, potatoes, and cream.
Ingredients - Serves 4
- Chives - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Chicken or vegetable broth - 4 cups
- Butter - 2 tablespoons
- Potatoes - 2 medium, peeled and diced
- Leeks - 4 large, white and light green parts only, sliced
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the leeks and sauté until softened, about 5 minutes.
- Add the potatoes and broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Serve hot, garnished with chopped chives.
