Seared Scallops with Corn Puree

- Chives - For garnish
- Garlic - 2 cloves, minced
- Heavy cream - 1/2 cup
- Fresh corn kernels - 2 cups
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Scallops - 12 large
Let's Get Started
- Season the scallops with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the scallops and sear until golden brown on both sides, about 2 minutes per side. Remove from the skillet and set aside.
- In the same skillet, melt the butter. Add the corn kernels and cook until they start to soften, about 5 minutes.
- Add the garlic to the skillet and cook until fragrant, about 1 minute.
- Transfer the corn mixture to a blender. Add the heavy cream and blend until smooth. Season with salt and pepper to taste.
- Divide the corn puree among four plates. Top with the seared scallops and garnish with chives.
