Seared Scallops with Corn Puree

  1. Season the scallops with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the scallops and sear until golden brown on both sides, about 2 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter. Add the corn kernels and cook until they start to soften, about 5 minutes.
  4. Add the garlic to the skillet and cook until fragrant, about 1 minute.
  5. Transfer the corn mixture to a blender. Add the heavy cream and blend until smooth. Season with salt and pepper to taste.
  6. Divide the corn puree among four plates. Top with the seared scallops and garnish with chives.
