Let's Get Started

  1. Rinse the beef tripe and pork's feet thoroughly under cold water.
  2. Place the tripe and pork's feet in a large pot and cover with water. Bring to a boil and cook for 10 minutes. Drain and rinse again.
  3. Return the tripe and pork's feet to the pot and add the onions, garlic, carrots, potatoes, and chorizo.
  4. Cover with water and bring to a boil. Reduce the heat and simmer for 2-3 hours, or until the tripe and pork's feet are tender.
  5. Add the cilantro and season with salt and pepper. Cook for another 10 minutes.
  6. Serve the soup hot, garnished with extra cilantro if desired.
