Sopa de Mondongo
Sopa de Mondongo is a hearty and flavorful Colombian soup made with beef tripe (stomach), pork's feet, chorizo, and a variety of vegetables.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cilantro - 1 bunch, chopped
- Potatoes - 2, chopped
- Carrots - 2, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Chorizo - 2, sliced
- Pork's feet - 2, cleaned and cut into pieces
- Beef tripe - 1 pound, cleaned and cut into pieces
Let's Get Started
- Rinse the beef tripe and pork's feet thoroughly under cold water.
- Place the tripe and pork's feet in a large pot and cover with water. Bring to a boil and cook for 10 minutes. Drain and rinse again.
- Return the tripe and pork's feet to the pot and add the onions, garlic, carrots, potatoes, and chorizo.
- Cover with water and bring to a boil. Reduce the heat and simmer for 2-3 hours, or until the tripe and pork's feet are tender.
- Add the cilantro and season with salt and pepper. Cook for another 10 minutes.
- Serve the soup hot, garnished with extra cilantro if desired.
