Sopa de Galets
Sopa de Galets, also known as Escudella, is a traditional Catalan soup, typically served on Christmas. It's a rich and hearty soup made with meat, vegetables, and pasta shells.
Ingredients - Serves 6
- Water - 2 liters
- Salt - To taste
- Onion - 1, peeled and cut into chunks
- Celery - 2 stalks, cut into chunks
- Carrots - 2, peeled and cut into chunks
- Potatoes - 2, peeled and cut into chunks
- Pasta shells (galets) - 200 grams
- Pork ribs - 200 grams
- Chicken - 1/2, cut into pieces
- Beef bone - 1
Let's Get Started
- In a large pot, add the beef bone, chicken, pork ribs, and water. Bring to a boil.
- Once boiling, reduce the heat to low and let it simmer for about 2 hours.
- Add the potatoes, carrots, celery, and onion to the pot. Season with salt.
- Continue to simmer the soup for another 30 minutes, or until the vegetables are tender.
- In a separate pot, cook the pasta shells according to the package instructions.
- Once the pasta is cooked, drain it and add it to the soup.
- Stir the soup well and let it cook for another 5 minutes.
- Serve the soup hot, making sure to get a good mix of meat, vegetables, and pasta in each bowl.
