Lutefisk
Lutefisk is a traditional dish of the Nordic countries made from aged stockfish and lye. It has a gelatinous texture and a strong, pungent odor.
Ingredients - Serves 4
- Potatoes - For serving
- Peas - For serving
- Melted butter - For serving
- White pepper - To taste
- Salt - 1 cup
- Water - 10 liters
- Lye - 3.5 liters
- Dried stockfish - 1.5 kg
Let's Get Started
- Soak the dried fish in cold water for 3-4 days, changing the water daily.
- Mix the lye into a bucket of water, then soak the fish in this solution for 3-4 days.
- Remove the fish from the lye solution, rinse it well, and then soak it in cold water for another 2 days, changing the water twice daily.
- Preheat your oven to 220°C (430°F).
- Place the fish in a roasting pan, sprinkle it with salt and white pepper, and bake it for 20-25 minutes, or until it is flaky and tender.
- Serve the lutefisk with melted butter, peas, and boiled potatoes.
