Solianka Soup
Solianka is a traditional Russian soup with a rich and tangy flavor. It is made with a variety of meats, pickles, and tomatoes.
Ingredients - Serves 6
- Sour cream - For serving
- Fresh dill - 2 tablespoons, chopped
- Lemon - 1, sliced
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Bay leaves - 2
- Capers - 2 tablespoons
- Olives - 1/2 cup, sliced
- Pickles - 4 medium, sliced
- Tomatoes - 2 large, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Sausages - 200g, sliced
- Ham - 200g, cubed
- Beef - 200g, cubed
Let's Get Started
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions and garlic and cook until the onions are translucent.
- Add the beef, ham, and sausages. Cook until browned.
- Add the tomatoes, pickles, olives, capers, bay leaves, paprika, black pepper, and salt. Stir well.
- Pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Remove the bay leaves and add the lemon slices and fresh dill. Simmer for an additional 5 minutes.
- Serve hot with a dollop of sour cream on top.
