  1. In a large bowl, combine the masa harina and salt. Gradually add the water, mixing with your hands until the dough comes together.
  2. Divide the dough into 12 equal portions and roll each into a ball.
  3. Flatten each ball into a disc about 1/4 inch thick.
  4. Place a spoonful of the chicharron in the center of each disc and fold the dough over to enclose the filling, sealing the edges well.
  5. Heat the oil in a large skillet over medium-high heat.
  6. Fry the gorditas, a few at a time, until golden brown on both sides, about 2 minutes per side.
  7. Drain on paper towels.
  8. Serve the gorditas hot, with salsa and sour cream on the side.
