Lentil Taco Salad
A hearty and healthy taco salad featuring protein-packed lentils and fresh vegetables.
Ingredients - Serves 4
- Sour cream - 1/4 cup
- Salsa - 1/2 cup
- Cheddar cheese - 1 cup, shredded
- Avocado - 1, diced
- Cherry tomatoes - 1 cup, halved
- Romaine lettuce - 1 head, chopped
- Taco seasoning - 1 packet
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Green lentils - 1 cup
Let's Get Started
- Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce the heat and simmer until tender, about 20 minutes.
- While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cooked lentils and taco seasoning to the skillet and stir to combine.
- In a large bowl, combine the lettuce, tomatoes, avocado, and cheese. Top with the lentil mixture.
- Serve the salad with salsa and sour cream on the side.
