Ingredients - Serves 4

Let's Get Started

  1. Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce the heat and simmer until tender, about 20 minutes.
  2. While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the cooked lentils and taco seasoning to the skillet and stir to combine.
  4. In a large bowl, combine the lettuce, tomatoes, avocado, and cheese. Top with the lentil mixture.
  5. Serve the salad with salsa and sour cream on the side.
