  2. Wash the potatoes and pat them dry. Prick each potato several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt and black pepper.
  4. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and the insides are tender.
  5. Remove the potatoes from the oven and let them cool slightly.
  6. Cut a cross on the top of each potato and gently squeeze the sides to open them up.
  7. Add a tablespoon of butter to each potato and let it melt.
  8. Top each potato with sour cream, chopped chives, crumbled bacon, and shredded cheddar cheese.
